CHEDDAR CHEESE SOUP

CHEDDAR CHEESE SOUP
8 servings

1 tbsp butter
3 tbsp chopped white onion
1/2 C small diced carrots
3 tbsp finely chopped celery
1/4 C small diced green bell pepper
1 chiken broth cube
1/4 C all-purpose flour
8 C water
1 225-gm pack cheddar cheese, grated
1 tsp salt
1 tsp pepper
1 C liquid cream, optional

In a saucepan, heat butter and saute onions. Add carrots, celery and bell peppers. Stir in chicken broth cube, and crush it with a wooden spoon so it blends with the other ingredients. Add flour and blend with the other ingredients until smooth. Pour in water. Add cheese.
Bring mixture to a boil, then heat to simmer. Let simmer until cheese is melted, stirring to make mixture smooth. Season to taste with salt and pepper. If desired, add cream and stir to blend.
