SUMAN AKLAN

250 gms malagkit rice
water for soaking rice
1/4 kilo brown sugar
6 C coconut milk

Soak the rice in water for about 4 hours. Set aside.
Caramelize sugar by heating it over a low flame while stirring in the coconut milk. Stir constantly until sugar liquefies and mixture becomes slightly sticky.
Combine the soaked rice and the caramelized sugar. Stir constantly until the rice is almost cooked.
Place banana leaves on top and cover the pan. When rice is cooked, remove from heat.
Let cool for a few minutes. Shape the suman into four-inch rolls and wrap in banana leaves.
Place banana stalks in steamer along with the water. Steam the rolled suman for 20 minutes.
