2 tbsp cooking oil
1 onion, minced
1 small red bell pepper, diced
1 180-gm can tuna flakes in oil, drained
salt and pepper
4 medium eggs
spring onions, chopped
1/4 cup grated cheese, divided

Heat oil in a frying pan and saute onions until limp and transparent. Add bell peppers and tuna flakes. Season with salt and pepper to taste. Transfer to a plate and set aside. Meanwhile, beat the eggs in a bowl. Season with salt and pepper. Add chopped spring onions. Beat well. Heat a non-stick pan and pour in the beaten eggs. Cook until eggs are set then spoon tuna mixture into onto one side of the set eggs. Sprinkle half of the cheese. Using a spatula, lift and fold opposite portion over the filled side. Transfer to a serving plate and top with the remaining cheese.
