SOTANGHON SOUP

1 tbsp oil
2 cloves garlic minced
2 tbsp minced onion
1/2 C flaked cooked chicken
2 C chicken broth
1 C soaked sotanghon nooodles
2 tsp soy sauce
1 tsp pepper
1/4 C chopped green onion

Heat oil and saute garlic, onions and chicken. Stir fry for a few minutes until chicken changes color. Pour in broth. Bring to a boil then add soaked sotanghon. Season to taste. Add chopped green onion.
